My Weekend In Pictures

Friday:
Yes, my weekend starts on a friday! I'd had a really busy last night at work, but decided not to go to bed, as I had lots of housework to catch up on and the in-laws were coming for dinner. I managed to do all of the chores before my energy slump! I promised to do the washing-up if Dean cooked. I did make my pineapple upside-down cake, though. Here's the recipe if you're interested:

Ingredients:
112g margarine (or butter, or dairy-free spread)
112g caster sugar
112g self-raising flour
1 tsp baking soda
2 organic or free-range eggs
1 tsp vanilla extract
1 tin pineapple rings
handful of glace cherries

Method:
1. Grease a cake tin and place the pineapple rings and cherries at the bottom.
2. If you have a mixer/food processor, place all of the ingredients in it and mix well. Otherwise, cream margarine and sugar together, add flour, baking soda, eggs and vanilla extract and mix well.
3. Pour mixture into cake tin, covering the fruit and spread evenly. Cook for approx. 25 mins at 180°C.

I usually just drink the pineapple juice, but you could also mix it with icing sugar and drizzle over the finished cake!

I also tried this new J2O drink, and while it was nice, I was disappointed that I couldn't taste the chocolate! We watched Anchorman 2 while we ate, and as soon as our guests left, I went to bed! I slept for over 13 hours.

I got up around 10am and had chocolate chip pancakes with maple syrup and a coffee and herbal tea for breakfast! I stayed in my PJ's until midday, as I still felt a little groggy from my long day on Friday. I didn't do much at all - pretty much watched episodes of Ghost Adventures and did some blogging. We didn't have any plans this Halloween, so we watched some horror films by candlelight instead! Dean picked Evil Dead and I chose The Shining!

I was up at 7am and was planning on watching the Most Haunted Live Halloween special, but it wasn't available on UKTV Play at the time, so I watched Ghost Adventures instead! When we were both ready and organised, we went through to Yeovil to grab some snacks for the evening. I hate driving in slow-moving traffic! I also hate people who don't look where they are going while operating a moving vehicle... After a quick spot of housework, we were ready to get the snacks out for our guests, arriving from 5pm.

We had pizza and crisps, as well as Ferrero Rocher and mint Matchmakers! We watched Mad Max: Fury Road and Cooties. After our guests left, I was glad to melt away the day's make-up with my Balmology Cleanse Balm and settle into bed for another episode of Ghost Adventures!

  3. Hey Em! :-) Hope you are doing well. Great post, it was really lovely to hear about your weekend. The pineapple upside down cake looks delicious! I’m extremely intrigued by the J20 drink, might have to give that one a go! :-) Sounds like your Halloween was lovely, I fancied a movie night by never got round to it. We had some halloweeners at the door and I did a spot of baking. It appears Halloween is becoming more popular in the UK, I enjoyed reading peoples blog posts on it.
