Emma's Special Macaroni Cheese Recipe

Macaroni Cheese is my favourite dish, ever. It's a real indulgence that we don't have too often as it's anything but healthy! It's particularly lovely on a cold winter's evening. I have been cooking it for years, using a basic recipe and adapting to our own tastes and preferences. I recently upped my mac n' cheese game by adding a new ingredient: chorizo. Dean adores chorizo, so I swapped the usual pancetta for something a little stronger! It was an instant hit.
Ingredients:
200g dry macaroni pasta
60g sunflower spread
1 large onion
70g diced chorizo, seasoned with garlic & paprika (purchased in-store The Co-operative)
30g plain organic flour
600ml organic semi-skimmed milk
200g grated organic cheddar cheese
salt & pepper to season

You can omit the chorizo for a vegetarian-friendly dish - I promise it will still taste delicious!
(If you can't source this particular chorizo, just purchase plain diced chorizo and add 1 teaspoon of garlic powder and paprika when seasoning the sauce.)

Method:
  1. Preheat oven to 180°C. Grease a large baking dish.
  2. Heat butter alternative in a large pan, add onion and chorizo. Cook for 5 minutes on medium-high heat.
  3. Add flour and stir over low heat for 1 minute. Remove from heat.
  4. Add macaroni and a sprinkle of salt to a small pan. Cover with boiling water and cook on medium heat for 8-10 minutes. Stir occasionally to avoid pasta sticking and clumping together.
  5. While pasta is cooking, gradually add the milk to the large pan, stirring until smooth. Return to a medium heat, stirring or whisking, and cook for 5 minutes or until sauce has almost boiled and thickened. Add seasoning, 100g of the grated cheese and the cooked, drained macaroni to the large pan. Mix well.
  6. Pour the finished mixture into your greased baking dish and sprinkle the remaining cheese on top, covering evenly.
  7. Pop in the oven and cook for 20-30 minutes, until lightly golden.
  8. Serve with a side salad and eat. Enjoy!
