The Cookie Jar #05: Oaty Raisin & Hazelnut Cookies | Food
guys! Hope you are having a lovely Easter Sunday. Unfortunately my laptop charger and battery have given up so expect some radio silence on here for the next few days until my new ones arrive! Really annoying! Anyway, here's today's cookie, from the Classic Cookies section, the Oaty Raisin & Hazelnut Cookie:
55g raisins, chopped
125ml orange juice
225g butter, softened
140g caster sugar
1 egg yolk, lightly beaten
2 tsp vanilla extract
225g plain flour
pinch of salt
55g rolled oats
55g hazelnuts, chopped
whole hazelnuts, to decorate
Preheat oven to 190 degrees. Line two baking sheets with baking paper. Put the raisins in a bowl, add the orange juice and leave to soak for 10 minutes.
Put the butter and sugar in a bowl and mix well with a wooden spoon, then beat in the egg yolk and vanilla extract.
Sift together the flour and a pinch of salt into the mixture and add the oats and chopped hazelnuts.
Drain the raisins, add them to the mixture and stir until thoroughly combined.
Scoop up tablespoons of the mixture and place them in mounds on the prepared baking sheets, spaced well apart. Flatten slightly and place a whole hazelnut in the centre of each cookie.
Bake in the preheated oven for 12-15 minutes, until golden brown. Leave to cool on the baking sheets for 5-10 minutes, then, using a palette knife, carefully transfer the cookies to wire racks to cool completely.
These were really simple to make and turned out well. They have a buttery texture and taste lovely!
